This is a Great Soup recipe for Garlic Lovers. Even people that don't like garlic much seem to enjoy this recipe! It can be made the day before, so is a great time saver.
Garlic Potato Soup
4 cups chicken or vegetable stock
3 medium potatoes, peeled and diced
20 garlic cloves, peeled and left whole
1 1/2 cups milk
2 tablespoons butter
1 1/2 teaspoons fresh rosemary,finely chopped,
or 1/2 teaspoon dried and crumbled
pepper to taste
1. In a saucepan, bring to a boil the stock, potatoes and garlic. Reduce heat to medium and continue to cook for about 15 min. or until potatoes and garlic are tender.
2. Puree soup and stir in the milk, butter and rosemary.
3. Season with pepper. Continue to cook until heated through.
This soup may be prepared the day before.
