After carving our Halloween Pumpkin we always had fun making these with the kids!
Spicy Pumpkin Seeds
2 cups freshpumpkin seeds
1 tbsp vegetable oil
1tbsp melted butter
1/2 tsp paprika
salt to taste
In bowl, toss seedswith oil, butter, paprika and salt. Bake on ungreased baking sheet in middle of preheated 250 degee F oven, stirring occasionaly, till crisp and golden ( 1hr to 1 1/4 hr)
Baked Macaroni and Cheese
This is the absolute "Best" Mac 'n Cheese recipe that I have ever tasted!
Baked Macaroni and Cheese
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon pepper
3 cups milk
1 1/2 to 2 cups coarsely grated sharp cheese
1/2 teaspoon Worcestershire sauce
1/2 teaspoon table mustard
2 cups elbow macaroni
1/3 cup breadcrumbs
1/4 cup grated cheese
Cook macaroni according to package instructions. Melt butter, blend in flour and seasonings. Add milk slowly and cook, stirring constantly until thickened. Remove from heat. Add cheese, Worcestershire and mustard. Stir until cheese melts. Combine pasta and sauce in a 2 qt baking casserole. Sprinkle the top with breadcrumbs and grated cheese. Bake in 400 degree F oven 18 to 20 minutes. 6 servings

Best Potato Salad
It's the little bit of apple cider vinegar that make this dish special!
Potato Salad
-5 or 6 medium red potatoes (leave peel on,cut in quarters, then sliced about half an inch, Boil for 15 min(or steam)
-about 1/4 cup chopped green pepper
red pepper
green onion
celery
-2 or 3 hard boiled eggs, chopped (optional)
Dressing-1/2 cup mayo
2 or 3 tablespoons of apple cider vinegar
1 tablespoon hot dog mustard
1 teaspoon sugar
Mix well and then add to veggies, potatoes and egg.( you can add more mayo if this is not enough dressing)

Garlic Potato Soup
This is a Great Soup recipe for Garlic Lovers. Even people that don't like garlic much seem to enjoy this recipe! It can be made the day before, so is a great time saver.

4 cups chicken or vegetable stock
3 medium potatoes, peeled and diced
20 garlic cloves, peeled and left whole
1 1/2 cups milk
2 tablespoons butter
1 1/2 teaspoons fresh rosemary,finely chopped,
or 1/2 teaspoon dried and crumbled
pepper to taste
1. In a saucepan, bring to a boil the stock, potatoes and garlic. Reduce heat to medium and continue to cook for about 15 min. or until potatoes and garlic are tender.
2. Puree soup and stir in the milk, butter and rosemary.
3. Season with pepper. Continue to cook until heated through.
This soup may be prepared the day before.
